Shotoku 7" knife.  I reafd ost Shuns are stamped, but from great steel, so asking Santa for a differentr, forged, one.

Hopefully $$$$$$$$$$$$$$$ I know that is a stretch, with wishful thinking and positive vibes you never know? LMAO!!! Just happy to be alive, I have lost 6 friends this past year to different natural causes. Getting older sucks, the alternative is not pleasing either. Having family is the best part no matter what. :)

I think you'll find that the majority of high quality knives have a harder, carbon steel core (of varying grades depending on the maker) that is sandwiched between even layers of slightly softer steel (again, of varying grades) and then joined together through forging. That said, whether it's Shun, or even one of the the many makers of higher priced knives on the market, some of their best professional knives are made from single pieces of high carbon steel honed to a fine edge.

I guess I'm saying to keep an open mind. The only reason I don't have single steel Japanese knives is because they're out of my price range, and I'm perfectly happy using Damascus blades . . . plus, they're kinda pretty.  :pig:

Zelite Infinity Alpha Series 7" santoku is on my list.  Looks very nice in quality and appearance.

I hope Santa brings me the same as last year, A 4 Generation Family Dinner and to be "Chef Elf" again this year for Spokane Fantasy Flight (Serves underprivileged Kids) nwnorthpole.org it has grown beyond 60 kids, last year Alaska Airlines used 2 aircraft.

Granted it will be just after xmas but I am getting a vacmaster vp215.   :cool:

You're going to love it. It's my top used kitchen device.

I just wish I had room for mine up on the main floor, due to space limitations, mine is stuck in the basement. But, really is a wonderful thing...

 Far as I know , Waltons Inc. has pretty close to the best price, if you signup for their news letter, I think they will send you a code good for 10% off... just know that it takes a few days for them to send you the first email with the code. ( in the past the code was WELCOM10 ).   They originally told mine the discount wasn't good on items that were on sale, but it worked for me, even when it was on sale and I got the discount on top of the sale price....  Anyway, I've been very happy with mine, one of those things that if you take good care of it, it's most likely going to last a LONG time.

What a great Christmas! The 4 generation dinner is priceless. Take lots of photos. The noth pole flight sounds like an awsome experience. Keep us posted on what "Chef Elf" might be cooking up.

So how does one shapen a knife like this? Are there any specifics about sharpening this beauty?
  Send in in to Zelite for resharpening?
  Sharpen it yoursel on your own equipment?
  Have a local knife sharpening service sharpen the knife?

Santa was making an early delivery to my home. He was bringing a new tankless water heater to replace the current one. Well as Santa tried to land my wife hit one of his reindeers and now I have a bill for a new tankless water heater and car repairs.

Santa please skip me next year!   :( :'(
