It begins with a 22+lb. Tom.  Simple salt n sugar Brines.  Kristin added herbs and spices, but I do not know what!  Lets see. 6pm EST on 11/21/17.  Bird will go on pit at about 10am 11/23/1...so about 40 hour brine, with a 3% solution...

Its a pork butt I boned and am curing with TQ.  I have heard people speak of buck board bacon.  I have never tried it, and this is just a simple cure, with a little pickling spices.  If it works, will have .99/lb bacon and not $4.00...

What's in the other bucket. ?

I started the Bird on the Memphis Pro, but both Kristin and I agreed that we have missed the smell that a cooking oven Turkey creates through out the whole house.  So after 2 hours of Hardwood smoke, into the oven it goes!

 All this and no-one will be putting any weight!  Heck,even the string on Bentleys turkey looks good. We always enjoyed sucking on the strings. That is what we did waiting on the bird to be carved carved and served.

All of this looks outstanding, gtsum2, the platter of carved looks really good. Very moist and juicy. Nicely done by everyone. We had ours last weekend, tonight we are having chili cheese dogs.
