I'm my own worst critic, so I found it to be a little overcooked.  I forgot that prime cooks a little faster, so the "smoke" portion of my reverse sear was done sooner than I desired.  I ended up leaving it off the heat longer than I intended so the outside was a little chewy.

Wished they had it at my Costco in MN.  Been wanting to cook one of these ever since my son-in-law in Southern Cal cooked one for me.

You probably won find these cuts in the supermarket, Z.
But if you talk to the butchers at Sams Club or at a local butcher shop, you should be able to find the cut.

As you now know, its a very tasty cut of meat. Just watch the grain, though and make sure you're cutting against it.
Price wise? This cut seems to be fairly costly at the local butcher. But HEY, I only need one - for the two of us.

That is almost a Marble Score 6 on the Wagyu charts...That is some impressive marbling even for Prime.

That is crazy; I've never seen tri-tip like that. I'm headed to Costco tomorrow after work for a few things . . . looks like I"m going to have to check out the prime case.

OK, your weird! :)  I like the choice also, but like the primes much better. I don't find them overly fatty, but they do stay very juicy even if you overcook them a bit.  Just wondering, do you like to cook them more on the rare side as opposed to med-rare?

I actually prefer TT be cooked to medium (bordering on medium well). I find the texture and overall ‘mouth feel’ to be much more appetizing. To me, rare/med rare TT is to mushy and chewy.  Told you I’m weird...lol. I can tell you this with all honesty, I get a lot of compliments on my Choice/medium+ cooked tri-tips. Weird people attract weird friends

My favorite cooking method is approx 2 hours of super low heat/smoke on my MAK, followed by a screaming hot sear on either my Blackstone Griddle or over my Slow n Sear filled with lump charcoal.

I’ve heard the same thing from several others as well. I’d like to try both side by side.

We did have a side of prime ribeye and choice strip from Costco awhile back, and the choice strip was actually better imo

Yep, I’ve tried the Prime TT’s several times. Every single time I have told myself...”should’ve gone with Choice!!”

I hear ya, for fattier meats I tend to like them more done so the fat has a better chance of melting.  The last tri-tip I cooked got past the medium range and was still juicy and delicious. The nice thing about medium on a reverse sear is that you get to see the smoke ring :)

Well, I went by Costco on my way home from work, today, to see if there were any prime tri-tip roasts to be had but no luck. All that were left were a few steaks. I was pretty impressed with the marbling - it looks pretty extreme.
