Ohh at least two weeks.  Lets the smoke mellow and soak in.  That's important for the flavor.  Since it's vacupacked, 6 months later a Mozz pack opened up and shredded on a pizza... OMG.  No hurry.  No friends etc get any till 3 weeks, it's the law cuz they will open it right away....   8)

have you tasted a difference between two weeks and four weeks?  I have heard/read both time frames.  Looking for some assessments of those who have tried either/or.

2 and 4 weeks?  Some diff I figure but 2 is the min, 4 is where it starts to get good.

I freeze old orange juice bottles (or other bottles) and most always put one or two in a pan just in case. Frozen bottles of water will not allow the possibility of humidity having any possible impact on my cheese either and cost nothing but a little time and gives me peace of mind.
I like your idea of orange juice bottles,  our ambient temperature here is about 45° in the winter. When it rises and I want to smoke cheese I have used ice but I like your idea way better.

watch that colby cheddar...if anything will start to melt or wilt it will be that based on my experience
