This question is based on assumptions...I am curious why you just don't use a green belly.  One that has not been cured and then not worry about the soak?

Care to share the wing technique (look really good) as well as the bacon bites? I'm thinking not enough time to get any bellies but might be worth a go.

3. Soak strips in water for 3 hours to remove salt. This is optional but I like it this way.

Sorry for the delay in responding. I just saw this post. I get my pork bellies from Restaurant Depot and this is what they have. I have never seen a green belly on sale at RD. I will ask next time I in the store.

Green just means it has not been cured.  I have never seen cured pork belly at RD.  You are saying that the Pork Belly you buy at RD are already cured?  I would double check that with the meat manager next time you buy one!

I have purchased about 10 from RD and I now soak all of them to remove the salt. I will be heading to RD in a few days and will look.
