They are in the oven.  I was not in the mood to get the oil out, I have to believe it will be a factor of 10 better when deep fried, but we will see.  If the bacon grease does not permeate and flavor the tofu, I believe it is going to be a failure!

I did cut the tofu in half, wrap in a cloth dish towel, put a small plate on it, then weigh it down with about 3lbs. and let sit for 30 minutes.

I had forgotten how truly flavorless tofu is.  I love the texture.  I certainly would not make them like this again, as the bacon obviously is wonderful, but the tofu is just that, tasteless.   

So we will now see how well tofu does in a brine.  I just have to figure out what flavor profile I want to try and impart to the tofu.  I did love the way the bacon conformed to the tofu and constrict as it cooked, was very pleased with that.  Will also be curious if tofu can be injected.

I also think cooked like this then tossed in a wok with a chili/char sue sauce might be a winner!

Yep, tofu is a carrier of flavors.  In far east cooking it's got a lot of spices in the dish and more of a protein since it's much cheaper than chicken etc in the past.  Dunno if you can meld it to a smoked usage.


Ohh Ohh! what about smoking it like cheese?  Use the tofu in bits to add flavor to I dunno?  Spaghetti sauce?  A nice cheese sauce if it breaks down like cheese?  I dunno, used to eat a lot at the neighbors since I grew up in a large japanese/chinese/filipino population.  But was usually stir fry etc.  It was good, better than my american cooked food at my house.... Meatloaf etc.

Tasteless I will agree...But it is not goo.  It would be like me biting into a ripe, Portabello mushrooms and saying has texture like goo.  Just not accurate.

I'll take the bacon,  the tofu, only good place for that is the bottom of the garbage can.

Tofu is great in hot and sour soup. That is about the only thing I've used it for.

What prompted this experiment?
