How Would You Celebrate Australia Day?

Bent is a member of an Aussie bbq forum and I occasionally pop in.  They are having a cooking competition this month where participants are to show how they are celebrating Australia day.  For information:

Australia Day is the official National Day of Australia. Celebrated annually on 26 January, it marks the anniversary of the 1788 arrival of the First Fleet of British ships at Port Jackson, New South Wales and the raising of the Flag of Great Britain at Sydney Cove by Governor Arthur Phillip. In present-day Australia, celebrations reflect the diverse society and landscape of the nation and are marked by community and family events, reflections on Australian history, official community awards and citizenship ceremonies welcoming new members of the Australian community.

You can submit anything as long as it is cooked on a pit/grill.  I asked if we should try and honor Australia with our cooks and was graciously told:  "This Challenge is to show us how YOU are celebrating Australia Day. Happy to see cooks from our overseas members with a local slant."

Unfortunately, I am not a creative cook.  I know they eat a lot of lamb in Australia and Bent has tried to make sausage rolls and meat pies like they do, but not exactly as good as pics these folks post.  So I am not trying to out Aussie a true Aussie, they will beat me every time.  I am trying to think of an American take on a dish which would celebrate Australia.  Any help to offer?

 I am completely stumped on this one..All I can think about is Crocodile Dundee, his Aussie accent and the barbie.. As the country is so diverse it could be almost anything from kangaroo to fish.

Well, to let you know my level of non-creativity, I thought that since they like meats pies, I could do a little American twist and make it chicken pot pie.  And then I thought "Is chicken pot pie American?"  So, I am slowly sinking......

Hey Lee,

Marketing ploy mate. Not Australian and you don’t see it anywhere over here. I know that all “Aussie” joints over there offer it.....but no one in Oz does.

If you all want some inspiration...cook some Lamb.

If you want a bit of a giggle then google “ Sam Kekovich Australia Day Lamb Commercials”

I never got the hamburger with beetroot, I even entered a competition one year, cant remember where I came in.  They also like an egg on it, but I was surprised to see how may folks here like that.  My brother is one, and I just don't get that.

I also just found out that the beetroot should be pickled, which makes much more sense to me!

Yeah, but how do you do a Yank's take on one of these?  I mean, I guess if I could get some armadillo, it would be like them with kangaroo or crocodile.

apparently their pigs in a blanket are sausage wrapped in bacon which sounds like a great idea.

The few Aussie's that I know do Shepherd's Pies. Not really an Aussie thing, but they have there own take on it.

Have been looking through the PF recipes and I think maybe I will do the Pepper Stout Beef recipe that pmillen posted. It has beef and beer both of which I believe the Aussies love.

I am thinking of replacing the stout with Foster's -- that is the only Australian beer I know.  I don't drink beer, so folks will need to advise if that is a bad move on my part (i.e. I don't know the characteristics and flavor profile of stout or Foster's)

The two beers are different, but I am not sure they will make much of a difference in this recipe (and I drink a lot of beer).  I have cooked it with several different styles of beer and have never been able to tell the difference.  It just needs liquid to cook when you cover it.
