Kristin and LSJ do hit on a required ingredient.  Gotta have those Hawaiian rolls...with or without the PP sliders.

You might have seen this one, but my family still is losing their stuff at these using the holiday ham left overs. I envision cooking the pork like you and other have suggested. Serving half of it just pulled and ready to plate. And the other half in this Sammie style:

Ingredients

SANDWICHES

12 thin slices deli ham/Hawiann Pork servings
12 Hawaiian sweet rolls, sliced
6 (3/4-ounce) slices Land O Lakes® Deli American cut into quarters
SAUCE

1/2 cup Land O Lakes® Butter melted
2 tablespoons firmly packed brown sugar(or a bit more for me)
2 tablespoons Dijon mustard ( or 1TBS)
2 tablespoons Worcestershire sauce
1/2 teaspoon onion powder
How to make

STEP 1
Place 1 slice ham/pork servings onto bottom half of each roll. Top with 2 quarters cheese and top half of roll. Place sandwiches into ungreased 13x9-inch baking pan.
STEP 2
Combine all sauce ingredients in bowl; mix well. Pour sauce over sandwiches. Cover pan with aluminum foil. Refrigerate at least 2 hours or up to 24 hours.
STEP 3
Heat oven to 375°F.
STEP 4
Bake, covered, 10 minutes. Uncover, continue baking 10-15 minutes or until tops begin to brown and cheese is melted. Serve immediately.

Thanks for all the ideas...      I got a bit of a reprieve on this... originally the gathering was going to be for this coming Thrusday, but now it's been moved to the Monday after that... So, I'm thinking of maybe doing a bit of a dry run this weekend, where I might cook one pork shoulder and also try this one recipe I found for grilled pineapple salsa...   I'm also considering maybe doing a pseudo Huli Huli chicken, or at least exploring that type of thing.

Since I'd likely be doing this in my PG500, Part of me is thinking that 'turning and turning' is probably not hugely critical to creating a decent chicken... But in all honesty, I'm just curious about the over all falvor combinations of what I've seen of Huli Huli chicken recipes.

probably not really very Hawaiian, but I"m thinking of doing the pork in a sort of pineapple and hot pepper sort of overnight marinade.

Roadside vendors selling huli-huli chicken from large wood burning grills are fairly common in Hawaii.  The sauce varies somewhat but the wood always smells a lot like mesquite.

The wood is Kiawe.  Mesquite is a very close approximation.

Edit:
Wow.  On a re-read of my comment, it sounds way more "know-it-all-y" than I intended.  Sorry.

That kind of language doesn't trouble me at all.  I prefer frank conversation.  I was conditioned by a father, several coaches and 30 years in a company with that social style.  Frank words eliminate the possibility of being misunderstood.  You go ahead and speak without clouding the issue with unnecessary words in order to make an attempt at political correctness.  My reaction is on me, not you.

We were supposed to have no facial hair on my highschool football team. I had a few squiggly whiskers one day at practice. The coach ripped them out with his fingers,  and told me to run until he got tired.

Never played sports, never had a coach.  I was a cellist and played in orchestras.  People think "classically" trained musicians are sensitive.  They have obviously never had a college level cello teacher or been around conductors. Demanding yes, sensitive no.  Guess that was why I got along with most of them!!

Test cook in progress... including smoked/grilled pineapple to make a sauce with...

The grilled pineapple,  sprinkled with a low salt version of Memphis dust with some Chipotle powder for good measure.   This suff tastes great,  should make some tasty sauce to put on pulled 'Hawaiian' pork sliders.

Yup. That was the pineapple...

Here it is diced with some jalapeño mixed in and simmered for awhile.

And the fully cooked pork butt

As well as a sandwich
