cooking ribs for 50-60 need some help

Hello

I have been volunteered to cook BB Ribs for 50-60 people so I need a little help as I have  never cooked for that many people at once, let me set it up employee appreciation dinner menu is bb ribs, brisket, garlic mashed potato, and lettuce salad,and possibly cornbread. Now whenever I bring any kind of BBQ to work they eat until its gone literally if i bring one pan gone, i bring 4 pans....gone so ya they like my stuff and eat like  :pig:

So my question is what is serving size on ribs 2 bones ? 4 bones? do i cut individual bones hoping they will not take as much or cut into 3 bones and and hope they only take one 3 bone piece ?

I only have to do the ribs not any sides or the brisket and I would say ther is 75 % guys 25% gals

I would go with 12-15 racks and cut them into individual bones.

Bar-B-Lew is correct, I think.  Maybe that way folks will be be able to go back for seconds, or at least not be as tempted to look like they're getting too many.  Maybe.

Let me find a picture of a rack of BB, see the amount of usable bones and I will come back and cipher...

12 usable bones...3 a piece with brisket is generous...yeah, I guess 15 racks.  And I would definitely slice them individually...

I'm no expert, just thoughts.
15 Sounds about right.
That's 4 ribs each for 60 people?
How many ribs are in a rack? 15 ?
Also, there are big satiating ribs, then there are skinny ribs.
You might need to compensate.
Definitely cut them into "ones".

If you want to error on the side of more than enough vs. just enough...

I'd go with 20 based on this...

A pig side has 15 to 16 ribs (depending on the breed), but usually two or three are left on the shoulder when it is separated from the loin. So, a rack of back ribs contains a minimum of eight ribs (some may be trimmed if damaged), but can include up to 13 ribs, depending on how it has been prepared by the butcher.

I was thinking 8-10 ribs per rack which would get about 2 ribs per person to go with the brisket and other items.  If you have someone serving, they could limit each person to 2 ribs.

Defiantly will cut into singles thanks guys, we will not be "serving" it will be self serv. BBLEW you think people will actually take two bones or you think there eyes will be somewhat bigger than there belly's when they see BBQ ribs ?

I think I will make sure brisket is on the table first

I hope you don't have to pay for the meal as you are probably BBQing two of the most expensive things per serving.  Best of luck to you and share some pics with us.

I vaguely remember a pic of Bentley's with coiled up ribs, don't remember details.
