Day #2 smoke - 15# of chuck roasts for pepper stout beef.  Going to cook and pull the beef today.  I will throw the veggies in when I reheat it the morning of the party.  Looks like might be able to fit about 15 or so of them on the Elite with the upper racks.

I do not know why, but I associate barley soup with the day...makes no sense...

After 3.5 hours at 275 in the Elite the IT of each chuck roast was 160-170.  Threw them in a pan with 5 beers, covered, and put in 350 degree oven until they fall apart so I can shred them.  Then they will go into the fridge tonight and get vac sealed and put in freezer tomorrow.  Exterior has nice dark color from the cherry pellets.

Pulled beef is done.  Will freeze it tomorrow.  I can't wait for cookinpellets to get the cherry pellets in stock.  I love the color that cherry wood puts on beef

Looks fantastic BBL, including all the great toys to have a professional buffet line.  But more important, that beef looks outstanding, can't wait to see it with the peppers, onions and mushrooms.

Ended up with 64 people in attendance throughout the day.  Started at 1pm and last people left after 10pm.  Put a good dent in the food - emptied mac n cheese and cabbage and shells.  Probably ate 75% of all of the meat.  Good time.  Working on plans for a Cinco De Mayo jerky cook next.

final serving setup...learned 2017 new years day the capacity of our breakers...need to tap into garage door opener outlet and two other outlets in the garage that run on separate breakers.  The steam tables draw almost 13 amps and the roaster oven draws a little over 11 amps.
