Wrap ribs in foil verses putting in pan with foil

Ok folks I usually double wrap my ribs in foil for about an hour which is the way my family and friends like them.  I am going to cook 6 racks for some friends in a couple days what would happen if I put all of them in a large pan and cover with foil would that have the same effect?

When are you wrapping them and are you putting anytime of mixture in with them when you wrap.  I ask because I wrap and add a mixture of sugar, honey or maple syrup and apple juice and then cook for about twenty to thirty minutes per side before unwrapping and mopping.  I do not wrap when finished cooking

I have done ribs where I put 2 racks in a foil pan with the ribs side by side. They came out great. Now I have never stacked ribs on top of each other in the same pan or in foil together. If you have ever stacked ribs in foil and like the result I would think it would be the same.

My brother does in all the time in his business on his stick burner putting 6 in a pan at a time.

I used to foil, but got tired of the foil tearing from the bones, etc.  Now I use cakepans when I get to that stage.  about 1 cup of apple juice in the bottom and in they go.

I see I should have told more in original question.  I usually cook naked on rack at 250 for 2 or 2.5 hrs. then double wrap in foil with honey parkay and brown sugar for around an hour, or until tender.  Then back on pit naked with sauce until sauce sets up.   I was just wandering if instead up wrapping each individual slab if I could put all of them in a pan with foil to make it easier.

 I basically cook my ribs the same way.  I have never wrapped in a pan but do not see a problem unless you flip the pan.  Then it is possible the honey etc might leak out

I gave it a try last night.  I cooked 5 slabs of BB ribs on pit for 2 hr. at 265 and then put in pan and covered with foil for another 1.5 hrs. here is a pic when I uncovered the pan.  I then put them back on pit for about 30 min. with sauce.   ribs was done and tender when I uncovered them and every one loved them.  It was a lot easier and less mess then wrapping each rack.

Looks good, David. Did you stagger the racks in the pan to create any separation or did you just lay them one on the other? I'm assuming meaty side down? Did you also add the usual honey, etc. before panning?
