Wings and Wing Sauce

What's everybody doing with their wings today? I've never really had my own over the top recipe and would love to get some fresh ideas.

Melt stick of butter in a sauce pan.  Stir in dry ranch seasoning powder to make a roux.  Drop in some some dried rosemary or rosemary powder.  Pour in hot sauce of choice and stir into roux.

Once wings are done, mix them in sauce and throw back in grill to allow sauce to setup.

That sound good. I did a stick of butter and pepper last weekend. The ranch and rosemary would definitely kick it up a notch. Thanks!

I am not doing anything too special.  Picked up 5# of wings.  Half I have half marinating with a little EVOO, lemon and Weber's Chili Lime Rub (saw it today, looked interesting so picked it up), the other half is EVOO, lemon, and an all around rub I really like.  Not sure what sauce I will finish with.  Good luck and have fun all, look forward to hearing all the stories of wing success.

Mix siracha & honey to your desired sweetness, it goes together very well.

I brined some overnight in some beer and chili flakes. Will see if it did anything after the smoker....

Brined overnight in salt, brown sugar, minced garlic and thyme  Covered in vegetable oil with Famous Dave's Chicken Rub.  I smoked 48 wings on wing racks at 205 for 90 minutes and turned up the heat to 425 for about 20 minutes.  I tried Lumberjack mesquite blend this time.  Not quite as much smoke as I'd like but it was zero degrees outside so I think the smoker was working hard to maintain temp and the smoke output suffered.

I did not use any sauce.

They were cooked perfectly and not dry.

I went with adding the ranch to the hot sauce. They turned out great!!
