Sous Vide container
« on: February 19, 2018, 10:28:09 PM »

I'm going to experiment with a cold smoke on some burgers and maybe steak, then sous vide, and finish up with a grill sear.  What kind of container do people use for sous vide?  I've been using a round pot and it kinda sucks!

Thanks,
Jon

Would a small rib rack work instead of buying a special sous vide racking system?

I have one of these for a rack.

I use one of these at times when I need a lot of water. You can buy different sizes, I cut a brisket in half and used this.

My lid for above.

I have an Anova and a Sous Vide Supreme.

You can use just about anything, unless you plan on doing veggies up in the 185+ range some of the cheap dollar store plastic stuff may get soft, I am not sure. I have used icing buckets from the local bakery, they are maybe 2,5 gallon. When using a larger vessel I like to preheat my water on my stove, if I am going to me cooking at 130 I will heat water to say 140, it will cool as it hits the cool container and and I allow the anova to settle the temp down.

I hope links like this are allowed if not please report or remove.

I believe keep the bag full immersed.

and keeps multiple bags apart from each other so the heat of the water hits all sides of the food ( ;D from what I have read in the couple of books I bought on the subject)

I have 3 'containers. One 12 qt Lipavi with lid, a coleman 24 can stacker, and most recently a 6 qt Rubbermaid sans lid. This one will be used for making cheese within the other two. I also have the ss rack and clips to keep things from floating.

If you love eggs that aren't hard boiled or fried, you need  a device like this. I can do 2 dozen eggs to perfection (congealed white/creamy yolk/peel apart easily) in about 30 minutes. They last weeks in the fridge with no ill affects.

Check out sousvideeverything on youtube for some entertaining videos, advice, and the occasional thumbs down. Sorry if a bit off topic, but it's well worth the watching.

I just spent an hour watching some of the videos. I now have a time killer. Thanks.

Also, in one video this crew cooked a brisket using a Camp Chef Pellet grill in conjunction with sous vide.

I used a metal pot for a long time,
but felt it wasn't the best

I used a 5 gal bucket once (for several roasts)
even tho the Anova says it can do 20 quarts,  it seemed like it wasn't optimal

so I built myself a FrankenCooler

Which cooler did you buy? the 24 can or the 33 qt. I want to SV my butts I have curing. the 24 can show 6" inside, if I put a rack in and the butt on it not sure the lid would fit.

I have the 24 can one
I really like this size,  I use it for resting my briskets (I got a plumbing endcap for a PVC pipe that fits in the hole)
I can fit a 18lb brisket crutched with a folded bath towel below and above it

I was thinking of getting the bigger one (the lids are interchangeable)
but I've not had an issue with anything fitting so far

I think it would depend on the but
it'd be close

you may try and look at one in person,
I got mine at a Fred Meyer in Washington
Walmart may have them, as well as some outdoor stores
