I found a cut of beef I can afford that I like

Bought it at Costco: Beef Chuck Pot Roast.
About $6.00 a pound.Bought 5 pounds
Prepared with dry rub and meat prep tenderizer blade.
Indirect heat setting of 220. Cooked to internal of 110 degrees.
Direct heat of 320. Cooked to internal of 130 degrees.
Slice like London Broil.
Man, it turned out great!

got them on sale for $2.99/# a few weeks ago...made pulled beef yesterday.



i used that cut for burnt ends too

$6/# is expensive as Sam's usually is a around $4/#

Chuck roasts are great, you can treat them like briskets. But with prime briskets at $3lb that's a better deal imo.

Chuck roasts are a huge hit at my house.
Pepper stout beef is so hard to beat.

Thanks for the posting, MMike. Did much of the fat render from the chuck? I was at Costco this past weekend and the chuck they had seemed to have mostly intermuscular fat separating the main muscles and not much intramuscular fat. I can see how that would slice up nicely like a London broil.

We use chuck roast for most everything anymore and Costco's is some of the best.   Cut it up for Swiss steak, fajitas, stroganoff, most everything that normally you would use round for.   Got one in the freezer right now I'm going to cook like I would a brisket.

There were still fat slaps visible when it was done.
But plenty rendered for fire and heat interaction making for wonderful flavor.
Honestly, I was getting bored with ribs and chicken.
I wanted something new exciting and yet affordable.
I thought I made a big discovery!  :D
I didn't know chuck pot roast was a BBQ and smoking "mainstay".
Now I gotta watch when it goes on sale!

Prices seem to be reverse in my area - brisket runs $6-7/lb, while chuck roast is often on sale for $3/lb

Now I feel bad... I like chuck roasts too, but if they are more then $4/lb I won't look twice...

If they are like $3.50 I'll buy...   but I'm also spoiled because I know of one place where I can get a Tri-tip for about $3.50/lb, and I'd rather eat tri-tip. :)

Yeah, I just bought a USDA Choice chuck roast that was on sale for $3, but marked down to $2.29/lb.  Cooked it SV for 48 hours and got nice and tender. Chucks are great on the smoker, but can't imagine how it would turn out cooked medium rare like that - it's a pretty tough muscle.

As far as I know that's a standard chuck roast.   I don't usually look at them when I'm in Costco, so I can't say for sure what they are asking for them at my local Costco, but I suspect they are around $4.50/lb..  I do look at them when I'm in my Sam's club, and they run about $4.50/lb there.  Costco never sells meat at discount when it's about to expire... I know this for sure because one day I saw a PRIME packer brisket in the case at Costco that had actually gone past it's sell date, I thought maybe I could get a deal so I asked a guy from the meat department about it, asked if they would sell it at a discount and he said no, we don't do that... I asked what they do with them, and it wasn't 100% clear, but he implied they grind them up for burger...   ( he pointed out that the way they label these, the sell date is like a week after the pack date and being cryovac sealed it has much longer life than what the sell by date said ( Although I was and am still skeptical of his comments in this regard ))   So anyway, because costco never discounts meat near expire date, I generally don't look at Chuck roasts there, because I know they cost more then I will pay for them...  Sam's on the other hand, will discount meat that's about to expire, and a chuck roast is discounted that way, it's much closer to what I'm willing to pay for one.

There seems to be regional differences. Tri tip is hard to find in my area, and when it is available, it's expensive. On the other hand, chuck roast is about the cheapest cut around here.

I don't really see tri tip in the Columbus, Ohio area, but chuck roast is normally pretty inexpensive and incredibly versatile in its use.
