Steak looks great but you missed one important step in the process that I use. I smoke them at 160° to an IT of 100-110° before vacuum packing. It adds another dimension to the flavor.  :2cents:

I absolutely did.  I am going to either cold smoke, just amazn tube or do what you did.  The steak was great but id rather smoke meat.

wow thats terrible.  I was having some issues after the first use.  It kept beeping.  And wouldnt work even when i had the water levels correct.  I tilted it, drained whatever remaining water there was and waited a few minutes and it fired right up.

Another bone in ribeye.  Wife doesn't like mid rare.  So I cooked this a nice medium.

No cutaway view. Seared.on rectec with no shield or drip tray.  Grill over the fire pot and meat right over it.

I just took all the diffusers out and heat shield.  And the metal grate is sitting over the open flame. A couple of miinutes on each side. Watch for dripping grease and never leave it unattended.

If you need a pic I'll take one later when the wife is home..

For steaks, I use the flat side of the Grill Grates to sear at around 500-550. Just takes about 30 seconds per side plus edges.

130-134 is probably good for Medium - I do 125 for Medium Rare.
