Makes good sense on the salmon to me, maybe even the vegetables, but I see no need on the beef!

I noticed the article mentions using mayo for grilled cheese sandwiches.
I've done that - replace the butter with mayo.
The sandwiches looked very nice after coming out of the pan, but the taste wasn't there.
I missed the burnt butter flavor of the grilled cheese sandwich.

When I saw the thread title I thought Oh God no.  But that article was very persuasive and it looks like a good tool.  There are things I will try it on.  But like you said Trooper, I would miss the butter FLAVOR on grilled cheese.  Seriously, grilled cheese is not something that is broken and waiting to be fixed.

I've been using Mayo for grilling fish for over 40 years. Especially good on Halibut.

I saw a video on Youtube of a gentlemen "teaching" viewers to cook brisket on a Traeger I believe. His "secret" was smothering the brisket in butter before texas crutch. Full disclosure, I have never tried it. That said, I was not enthused by the idea. As you said, just no need on beef. Butter basting a steak in a pan is different than wrapping your brisket in foil with a stick of butter. To each their own I guess.

You might want to give grilled cheese a try. A friend that worked in a diner told me about it 20 years ago and I've been a convert ever since. Most cheese already has a some of the same component flavors as butter.  Mayo browns better and adds another note. Some folks use both.

Another thing I've been doing ( I think I saw this on Serious Eats) is grilling both sides of the bread - adds more crunch and more brown flavors.

I had to follow up...No meat for me since its Friday so I had to give the grilled cheese / mayo a try.

For the first picture I tried to show how much butter and mayo used.  Full sandwich was butter and half is mayo (still didn't trust it)



The second picture shows how it did on the griddle



The third image is the dunk test w tomato soup



Results:  On the griddle they fried up about the same although I think the mayo sandwich did cook up a little quicker.  On taste, there was a very slight difference in taste but I would wager that if you blindfolded me I wouldn't have known the difference.  Both had the right about of "crunch" and both held up as expected after dunking in the soup.  I don't think I would do it again but its nice to know I can still have a grilled cheese sandwich if I am out of butter.

I will try this on the grill at a later time.

 What first came to mind was Big Bob Gibsons white sauce. Then I  had a look.. I will definitely give the mayo a try.

Portillo's in Chicagoland uses mayo in their chocolate cake instead of butter and that cake is deliciously moist.

I thought I was the only one that did that!  I do not use it in place of butter, but it is an ingredient in my cakes!
