Tried new jerky seasonings
« on: April 11, 2018, 02:54:00 PM »

I usually make a spicy Teriyaki beef jerky, but thought I'd try something different this time.
I posted my usual (spicy) Teriyaki recipe and the Sweet Sriracha recipe. Alton Brown's recipe can be found at Food Network's site.

I like to marinade for 2 days. I like eye of round, but found a 2 lb top round on sale for $3.49/lb. Very lean.

Blotted dry, but not rinsed.

Smoked at 180 F for 2-2.5 hours. I like it a bit flexible.

Neither my wife nor I cared for the Alton Brown recipe. The Sweet Sriracha was good, but a little too sweet for me, so I cut back on the sugar when I posted the recipe. Both of us like my usual spicy Teriyaki best.

Very informative. Thanks for posting..I may very well give your Teriyaki recipe a try, on or before June 12 ( National Jerky Day ).
