Have to be honest,I understand your concept and why you put the Dungeness in there, but that one element is giving me issues with a burger.  Everything else sounds great.  Good luck to you RR and I hope you take golden ticket.

Boy that is a great looking burger but also kinda ambivalent about the crab.
I grew up in Los Gatos Calif, very close to Santa Cruz and grew up on Dungeness crab but never heard of it in a burger but maybe I am missing something. Awfully tough to find the crab in Kansas so might have to wait for a trip back to my brothers house.

I confess the dungeness is what intrigued me the most and would have me most interested in the burger.    I assume the purpose is to highlight the regional/Washington State representation.    For me that really sounds like an amazing addition.

Last Thanksgiving we made a dungeness stuffing.   No leftovers.

Hey rr.... I have to echo CJ's thoughts.....that burger already looks like a winner.  Good luck with getting a golden ticket.  Thanks for sharing.

Just a Little Background on the Burger- In this competition the Recipe must represent your State, for me the West Side has been how people think of WA including culinary delights with little thoughts about the other treasures we have to offer so I set out to accomplish 2 things:
1. A burger that represents all WA
2. A Blended Burger different from the rest.

Blended Burgers are the new culinary golden child, even The James Beard Foundation has gotten in on the act. As per my style I wanted to be different and have been working with many non-traditional blending's (Never been one to follow the crowd).

I also made a discovery or two including WA is one of the larger producer's of Blueberries.

So here is how my Burger represents all of WA State:
Beef- Locally Sourced from Eastern, WA
Blueberries and Apple from Central WA
Mushrooms from the WA Cascades
Dungeness Crab From the Coast/Puget Sound

As Far as the cream cheese I wanted to be different then the standard fare so I came up with the Cream Cheese, Crab and Grated Apple Spread, Crab actually pairs well with Steak so it would with Burger as well (and it does) the sweetness of the apple enhances the sweetness of the crab and also downplays the saltiness of the cheese and crab, lastly the addition of Chipotle Chili powder adds a little heat and smokiness . It actually did a great job of replacing a favorite cheese with something more unique and different.

Anyway that's my story and i'm sticking to it.  :rotf:

You don't need to wait till July, it is a winner! Whether or not it is selected is a different story, but there is no doubt in my mind it is a winner!!

I completely get the story line and think your representation of the state is flawless.  And I understand surf and turf.  I guess I just have never taken a bite of crab/lobster and steak together.  I eat each separately.  The two flavor profiles just clash in my mouth.  But is obviously is a well thought out creation and you have done the foods in the state proud!!!

Thanks Kristin, for you I’d make a deconstructed Steak Oscar so you can have your Steak and Crab seperately  :rotf:
