Costco pork butts

We just got a membership to Costco.  I haven't bought a pork butt there yet but I looked at their meat on our maiden voyage. Right now I get my pork (ribs and butts) at Hy Vee and they're Hormell.  I noticed Costco carries Smithfield (I think, I'm not 100% positive).  Their ribs look fine, they come two to a pack, which I can deal with.  But I noticed the pork butts are HUGE.  Hy Vee sells avg. 3lb boneless and avg. 6-7lb bone-in.  These Costco things were like 17lbs.  Is this two shoulders packed together or what's the deal?

Yes, there are usually sold 2 to the pack, boneless.

I always pass on their butts so I don't have first-hand experience with them.

But Costco double packing is common.  For instance, their pork tenderloins look like two tenderloins shrink-packaged separately in connected packages.  But when you cut them open you find two tenderloins per shrink-package, for a total of four for about $40.00.  So you might be buying four butts in that deal.

2 boneless butts is how Costco does it. I’ve had good results with them but I wish they were bone in.

Agreed. I don't use them for pulled pork but they are great for sausage, pozole, and country style ribs.

I bought a two pack of them last week because I wanted boneless.  I smoke mine using a rotisserie and the bone-in one's are a hassle to get on the spit.  Each one weighed between 7 and 8 pounds.

The Costco neat me has the Swift brand. I guess they carry different brands in the various regions.

It probably is just me, but I prefer bone in Boston butts. My Costco only carries the boneless ones.

DFW Costco's also carry the Swift brand, 3 Racks to a package normally running very close to 10#. More times than not, the Membrane is already pulled off.

I've been buying baby backs from Costco for years and I've never seen a membrane on the back. Its one of my favorite reasons to buy from them.

I do not know much about the Costco butts except that they are two to a pack and are boneless as has been mentioned. I don't mind that they are boneless, but have found that they need to be tied so they do not cook unevenly and fall apart as you take them off the cooker.

Yes, they are 2 to a package.  I used them for the first time recently for a birthday party.  Even though they are boneless,  they were great.  Very moist and full of flavor.  Everyone raved.  I'd buy them again.

Ribs at my Costco (Eden Prairie, MN) always come 3 to a pack. Both St. Louis cut and Baby Backs.
I used their St Louis cut ribs in my 2015 Royal cook.
It seems they always have the membrane removed, too.

Our Costco also carries Swift brand ribs.  3 in a pack and membranes never removed. It would be nice not to have to pull them.
