You can find whole short ribs at Sam's Club. Here is a cook I did. https://pelletfan.com/index.php?topic=405.0

How many slabs are in a case?

I'm guessing 10 - 15 slabs are in a case. I'm guessing you could speak with the butcher before ordering if you want to specify a certain number of slabs.

OK - that makes sense to me now.  I may discuss this with a couple of my neighbors that have pellet smokers to work up a deal to split a case.  I don't have room for that many ribs in my freezer, but between the three or four of us it may work.  How big is the case (inches/foot by inches/foot) approximately?

Edit:  I talked to two of my neighbors that also have pellet smokers and they are in for a case to split among us.  I need to verify some info.  Each case will have 10 to 15 slabs and each slab (per Sam's Club) will have to 2 to 5 ribs.  Is this correct?

My advice is to call Sam's Club. I'm sure they will be happy to assist. The info I gave you is based on my previous purchases. I'm sure they will sell you whatever you like.

Opened the cryo-vac and I was wrong. Three bones on each piece. This is one piece with one rib sliced off.

I have a couple in the DB getting happy at 250°, pics to follow when done.

nice batch of ribs last night.   Kept it very simple,  salt, pepper, smoked paprika and garlic powder.  No glue, 6 hours at 250.  Probe tender, 35 minutes rest.     Next time I think I'll go another hour.  As tender as these were (IT of 201 to 210) , still some room for more breakdown of connective tissue.

Were they moist?   Would an extra hour tend to dry the ribs or do you feel that would solely contribute to more tenderness?   Nice pics!

yes they were very moist!   These were some of my best yet, but I still haven't matched what I tasted in Texas.   Later this summer I'll be patient and go the full 7 hours and report back.   I suspect the extra hour and maybe a texas crutch might improve tenderness even more while maintaining moisture.

I have got to try these again.  I haven't had much luck, but I don't think I cook them long enough.  Apparently just being in Texas is not the secret to good Dino ribs, although it should be in my biased opinion.
