Author Topic: How long can I keep a smoked Brisket Refrigerated that’s still wrapped in foil?  (Read 493 times)

Help based on schedule need to smoke a brisket Wednesday to eat on Saturday.  I traditionally foil wrap at stall so the brisket will be sitting in juice.
So should I remove it from the juice or keep it as is?
I do not want this to become mushy.
Suggestions?  This is for a bunch of guys I went to high school with 30years ago.

I would remove from juices and put in a ziplock bags or vac seal.  Keep the juices in a container as you can warm them up to put back over the brisket when warming it up.
