Still Good or Not?

Pulled a SMOKED Vacuum Packaged Brisket out of the freezer 7 days ago and put it in refrigerator to thaw. Was never opened and now it's a week later.
Good or No? Your thoughts and I hope none of you have ever done this.

Does it smell ok? Years ago I used to hunt with a city food/restaurant inspector. I pulled out a supposed fresh steak that had a funky smell. I was ready to toss it. He smelled it and gave me his and said he would eat it. He first washed it throughly. Mine was a much better cut of meat than his LOL.

He told me that Steaks and other dense cuts of meat may begin to get a bacteria smell on the surface, but due to the dense meat it was most likely, only superficial. Now, that being said, I am not afraid of a dense steak maybe having a slight odor then being well cleaned before use. Pork? Well, I guess it depends on the cut and how much fat? If it smells okay, and you cook it to a minimum of 165* IT I would most likely not hesitate. JUST MY two Cents worth. Your mileage may vary.

I think Indians smoked meat and kept it for quite a long time.  I would say you are OK as long as the vac seal bad is still tight.  Like others said, give it a smell test too.  I would eat it.

Great news! Thanks all. Once that seal is broken it won’t last long. I had thawed it for some house guests but we were all on the run so much we never opened it.

I don’t think the way most of us cook brisket is not the same as smoking meat for preservation or like the Indians or cowboys did it.  You might say the brisket is not done like jerky or to cooked to remove all moisture.  That being said, it likely took several days for your brisket to defrost in the fridge so I would eat it.
