How to make burnt ends.

I see them hype burnt ends on Pitmaster tv. Iv heard and read of them being made out of point, pork butt and poor man Chuck roast. My question is what temp are you cooking them too. When I cook all three of those proteins to 203 degrees they are way to tender to cut cubes out of.

I cube around 180-185 it.  Sauce and back on the smoker for another 1.5-2 hours.  I am sure you will get lots of ideas on how to do them.

cube the chuck roast before cooking, put on rub, and smoke until they are probe tender.  pull of smoker, sauce, and throw back on until sauce glazes.
