Beef Ribs on FEC 120

Hey all I am going to try beef ribs on my FEC 120.  I never have cooked them and any advice would be greatly appreciated.  From what I read don't cook too hot or the marrow comes out and they will be gamey.  I was overcooking my pork ribs so I am looking for any advice.   Fast Eddy himself told me how to cook pork ribs with the FEC on the other board years and years ago.  Any advice would be much appreciated!

Plate Ribs so they are short not the really long thin ones.  These are the wide fat ones - if that makes sense....

I cook them at 285 and never had an issue of them turning out gamey. The above cook was on my Grid Iron but I have done them on my FEC-120 the same way.
