Im going to do a hole chicken. I will only poor boiling water on 1/2 the bird to see the difference.

Can somebody please advise on exactly how you dry brine a turkey?  I’ve never seen that before. Salt on skin and under skin?  Just on top? 
I’m all in on Turkey a la Darita tomorrow. Thanks!

Ralphie, all drying brining is, is salting or seasoning the spatched bird and place it in the fridge for at least 6 hours. It acts the same way a wet brine works only for me, it's a lot more convenient.  If you like, you don't have to waste your rub on it.  Just use some garlic salt and pepper.  The salt is the main thing, as it helps draw moisture out of the skin.
Good luck on the cook and please report back.  Try to follow the recipe as closely as possible, otherwise your results may vary.

I've been playing with this a bit and have a bit of an alternative.  I love, love, love the HEB pre-seasoned leg quarters.  Problem is that I can't pour boiling water on them as I'll wash off all the seasoning.  My alternative has been coating with olive oil and cooking on the indirect side of the PG1000 at 425°.  I get wonderful, crunchy, crispy skin every time.  Works great if you can't use boiling water!
