Tuna Fish and Noodle Casserole

I'm thinking about comfort food.  Does anyone have a good recipe for tuna/noodle casserole cooked in the pit?  I think I'd like it with a little smoke seasoning on it.  If so, please post it in the recipe section.

This is one dish I don't have a true recipe for, I just "make it".  I can tell you how a make it, but it also often comes down to me adding a bit more of this or that as I make it, so I am not sure if that is what you are looking for or not Paul.

In my house we refer to this as "whitetrasheroll". No insult intended. I grew up poor and it was a staple. Along with my mac and cheese with hot dogs. My wife did not grow up with these foods so she mocks me (with love) whenever I want to eat them. She wont go near the tuna casserole but we have upgraded to better cheese, better noodles, and better sausage for my hot dog mac and cheese. I am with Kristin, isn't really a recipe as much as a through what you think should be in there and cover with cheese and bake.

Tuna noodle covered with cheese? Never had it that way, it was always crushed up wavy potato chips on top. Now I can't decide if I want to try cheese or not...

My family's was always really, really simple: tuna, cream of mushroom soup, egg noodles and those chips. Not sure that recipe would benefit much from the pellet grill though.

I was just thinking that my recipe might not benefit that much from it, but I’ve been surprised before. Potato chips are not something I would guess to absorb much flavor. I’m sure other recipies would benefit more, especially with cheese on top, etc.

Oh, yeah.  A cap of crushed potatoes chips probably wouldn't accept smoke.

It's pretty basic for me. Tuna, Cream of soup (it's all good), peas, and finely chopped celery. I dunno about the cheese, but the crushed p-chips are a must. If the chips soak up smoke like egg rolls do (and I bet they do), that'll give you all the smoke you need. I imagine olives would be interesting, as well as diced onion. Maybe some fresh dill?

Your wife is a smart lady!  I grew up with the tuna casserole, $&*% on a shingle, mac and cheese with hotdogs, cheesy potatoe stuff with spam....only one that really offended my senses was tuna noodle.

Ours is extra wide noodles, tuna fish, creme of mushroom soup, milk, garlic powder and topped w bread crumbs.  sorry no cheese.  Have been making it so long I don't have a recipe written down

I guess I am in the minority with using cheese and also probably my methods.  I will cook the noodles, drain, then put back in the pot. Add tuna -- I use only white albacore in water (drained) and usually a couple of big cans because I like a lot of tuna flavor -- mushroom soup and grated cheddar and Velveeta cheeses, sometimes mozzarella if I have it around. Then add some half and half as the liquid element to help make it smooth and make sure everything is creamy.  I mix that all in at low heat so that the cheese is incorporated all through and melted.  Then into casserole with crushed potato chips on top and bake a while.  I think the cheese and half and half is what it makes it smooth and creamy.

I guess the way I make it I don't necessarily think of it as an inexpensive dish because water packed white albacore is not that cheap, especially the big cans.

I used to work on a farm when I was a teen.   Everyone was treated like family there, and the woman who ran the household there made some great tuna noodle casserole... I have no idea how to make it myself, and I doubt I could re-create the image I have in my mind of those wonderful lunches we'd have at the farm...   Whole milk, straight from the milking parlor refrigerated tank...  and all home made food.     Just crazy good folks these farmers were/are.

I think I cook it at about 350 for 30 minutes.  Wish I could be more specific.  I usually just test to see if it is nice and hot.  Also, I don't have a real measurement on the cheeses or half and half.  I just keep adding until it looks, feels and tastes right -- or, should I say, tastes like I want it to taste!  Man, as I write this, this is an absolutely terrible way to share how to prepare something!
