Pickled Pork is easy and great with any kind of beans. I use a recipe from Alton Brown. Cubed and marinated shoulder. I cook on Kabobs on the Traeger.

I do the no soak method in my Instant Pot.   Nicely soft beans in about a hour or less ( time to get up to temperature, 25 minutes at high pressure, then at least 15 minutes or so while the pressure releases a bit, before opening up the pressure release valve.  Apparently soaking might keep some of the beans from 'bursting' during the cooking process, but for me, I had no objections at all to how intact my beans were without soaking.  Bottom line for me... after using the no soak Instant Pot method, I doubt I'll ever soak beans again, and probably won't buy the precooked beans anymore either. 

  Actually, I'm amazed at how good beans can be right straight out of the Instant Pot...     I use almost 100% broth for the water... at least 50%,  I add some onion, garlic, bay leaf or two, maybe a little cumin, one or two jalapenos that have been seeded ( no need to cut them up much, cause you can pull them out afterward if you want ).        In the past, I'd never eat beans immediately after cooking them , usually the'd go into another bean dish and get cooked some more, etc... ( like baked beans) , but wow I really love the beans I cook right out of my Instant Pot. They do also make a great start to baked beans, or other dish that calls for beans.  I'm almost exclusively using pinto beans, in the past I'd go with Great Northern...  The Great Northern work out just fine,  but for some reason I've been really liking the Pinto beans better lately

I am a big fan of pretty much any kind of bean. For chili, a mix. For baked, navy beans. Retried beans, pintos.
