My 5 Layer Brownie Cheesecake Cookie Top Dessert

Folks, you will have to bear with me as this thread is going to take a while to construct.  I took pictures in order and Bentley is going to upload them since I have trouble with multiple pictures.  I will then go back in and offer explanations for each picture. 

I saw a video of a 5 layer brownie-cheesecake-oreo cookie-choc chip cookie dessert that looked kind of neat.  I did not like the two Oreo layers, so I decided to modify and try my own variations.  This recipe was from Tasty.com.  Although the video makes it look simple, this was early 5 hours to make and several problems.  I don't think the recipe is accurate on cook times, so that added to the problems.

So I started with the pre-made cookie dough and shaped it into a disk.  Actually was harder to do than I thought and took a bit of effort to get it evenly spread around.  But finally done and into the freezer.

Next came the brownie mix -- two packages.  I was suppose to use a 10 inch spring form pan and I only had a 9 and 1/2 inch, but I don't think that should have made a huge difference.  I think two package is too much.  Should have put about one and a half packages.



After pouring in the mixture, you take an 8 inch cake pan and press down and cook.  This worked ok and I understand why they did it this way (to have side) but it is a pain.  Also, the cook time of 35 minutes was ridiculous.  I double it and still ended up with raw brownie mix.



The bottom two pics are after 70 minutes.  Still raw, so took the insert out, tried to smooth the brownie dough down and just put back in the oven for about 20 minutes.

So here is the cooked brownie.  Still not convinced it is completely cooked, but there will still be more time in the oven, so I don't want it to be a hockey puck.



Then one of my Oreo replacement layers -- walnuts.

Next, moved on to making a very simple cheesecake filling. Again, cooked it 25 minutes extra and still don't know if it is done. It was difficult to get the brownie mix up the sides and had some unevenness.  You may see where I tried to "patch" so that the fillings woud all stay in.



Then my next replacment layer, caramel sauce. Then sprinkled a little kosher salt on top of the caramel.




Finally put the raw cookie dough disk on and baked per recipe.  Again, had to cook an additional 15 minutes and not convinced it is completely cooked.



It now is cooling and needs to be chilled for several hours before cutting.  This is for a family dinner tomorrow, so no final result until then.  The cake went in the freezer after the cheesecake cook but before the cookie dough cook.  I wish I had put the caramel on then and given it a chance to harden before the final bake.  I will be curious to see if that layer can even be seen.  Might have been better to use firm caramels instead of sauce.  This is why you test.

The whole thing may be badly under cooked.  The times in the recipe are just way off and I think some of the amounts are too much.

Imagine that, that looks crazy good. Not sure how that couldn’t taste good.

Do you think you could make this on a smaller scale and it wouldn't take as long to make.

You did pour both mixed packages of brownie mix into the pan, or just 1 1/2? What temp did you bake the brownie mix at? I guess once you figured everything out, are you posting the recipe?  I know, a lot of questions.....

I probably could, would have to give lots of thought to the pans used to cook it.

I used the 2 boxes the recipe called for and followed instructions to cook at 350 for 35 minutes.  The recipe can be found at Tasty.com under "5 Layer Cookie Box Brownie Cheesecake" recipe. My modifications were just substitutions of the Oreos.

Yeah see Tasty recipes are BS.  Hate to say it but its just not proven.  As good as that looks it looked like a real PITA :)

Would have been easier to make a cheesecake and add some stuff to it.
