Beef Whole Boneless Shoulder & Shoulder Roast?

What are these?  The same local grocer (Rouses) that I asked about the case of spare ribs has these on sale also this weekend only.  They are both USDA Choice Angus Beef.  The beef shoulder is $2.59/pound and the beef shoulder roast is $2.99/pound.

I know very little about cuts of beef but it sounds like chuck to me.  ::)

Great cuts for anything that call for thin roast beef!

It's probably a clod.  Ask the butcher.

I think there's at least one recipe here on PF.

Clods are about the least costly beef cuts.

Clods are about the least costly beef cuts.

I was thinking it was the shoulder clod separated into different cuts. They separate some so they can get higher price with better cut. But not sure.

My wife wanted some pulled beef which I usually make from chuck roast.  I saw the word roast, so I thought this may work.  From the above posted pic it appears to be pretty lean.

I don't have any experience with a clod, it was new to me 2 or 3 years ago, but I kinda' figured that the chuck roasts are in them, somewhere.

If you don't want to cook the whole clod, you might be able to cut it some more.  It's going to be beef, no matter what your cuts look like.  If you don't have a meat saw, put a new, washed, blade in a hack saw.

Yes, standing rib roast. 




But, it is expensive, so it is usually Eye of Round.  But, to take it one step further, any beef cooked to about 130°, cooled and sliced thin is going to make tender beef, it then comes down to getting that flavor, that is the hard part with lean beef.  I guess that is why there are Cheese Steak Sandwiches, Italian Beefs, and French Dips, and Creamy Horseradish and Hot Sweet Mustard!

Whole clod has brisket, flat iron steak, and a few other cuts in it.  I made one once.  It took like 18 hours on my Memphis, and then fell apart.  I couldn't slice it.  It turned into pulled beef before I had seen the chuck roast pulled beef recipe.
