Tyson Pork Ribs?
«
on:
March 31, 2019, 06:48:00 AM »
A neighbor who is retired from the military took me to a local base commissary to look at their meat department. They had Tyson St. Louis style ribs for $2.02 a pound. The spare ribs were even less. But I have never seen Tyson brand pork ribs.
Has anyone tried these and how were they?

Good as anything else out there.
I'd stay with the St. Louis cut.

I tend to cook more baby back than STL ribs, but if I could get them for $2/# I would probably make more STL.

I’m not sure I’ve ever seen Tyson branded ribs, but they have more labels than about anyone. They own IBP which has the stronghold on all the packing plants I know of around here. I only see hormel and smithfield in stores though.

I smoked these today and the only negative I had was they were fatty. I plan on getting some more to try them again. When I got this rack it was the only one left, so it could have been left behind due to the fatty sections.

Where was the fat? On the exterior or interior?
Exterior you could trim before cooking. I do that sometimes if it looks like too much for my liking.
Interior maybe they needed to be cooked longer to render or just plain fatty and not much you could do.

Both - my wife trimmed off what she could on the outside. The layer inside where just plain fatty where some of it did render.
My wife said the ribs she had did not have the fatty section that I did. She also pointed out that these did not have a membrane on them that she normally pulls off. For $2.02 a pound I will definitely buy them again.
