I found the temp sweet spot for ribs

On my GMG DB: It's 250. The fat drips onto the foiled plate and interacts with smoke / vapor. Perfect!  :lick:

That is what I smoke mine at, but I have them on a raised rack.  They usually take about 4 to 4.5 hours for St. Louis style ribs depending on how meaty the ribs are.  This gives me time to drink a few beers while they are smoking.

A lot of people do ribs on drums and kamados right over coals at 275° to 300°.  Some are laying flat on grates and some are hung vertically.  Grease drips on the coals making plenty of smoke without flaring up.

I prefer ribs on my Pit Barrel to any other ribs. 275° - 300° is what it cooks at. For St. Louis 3.5 hours gets me tender without falling off the bone. A couple of times I have had racks fall but I still do it that way. I have never managed to make ribs on the pellet cooker that are as good as the PBC ones.
