Bentley, I am not sure what the cut of beef is that they use.  It is prepackaged in a 10# box.  What I can tell you is that restaurants in Eastern PA are using it to make their cheesesteaks or RD would not be selling it.

I thawed out a package of this meat and made some prime rib cheesesteaks for dinner.  They were ever bit as good as I had hoped they would be.  Fell apart in my mouth.

Forgot to look for this last time, dang it!

My sandwiches were from my smoked and sous vide rib roast not the RD cheese steak meat
