Mediterranean Style Food

Instead of BBQing I  been serving up Mediterranean style food.  Two of the dishes were eggplant in a tomato sauce and one other has been Moroccan  lemon chicken cooked in a Tagine. 

The eggplant in tomato sauce is an easier version of Eggplant Parmesan.  Instead of breading the eggplant and sautéing in olive oil it is placed on a layer of the tomato sauce topped with more sauce and Parmesan cheese and topped with another layer of eggplant.  The remaining sauce and cheese is then spread over the top.  Tent it with foil cook in the oven at 400 degrees for approximately 45 minutes.  Take the foil off and cook for another 15 minutes or until the cheese is brown.  It is now my go to version for eggplant.  After cutting the eggplant be sure to salt the pieces and let sit in a colander to drain the moisture from the eggplant before cooking.  Serve over homemade pasta.

As for the Moroccan Lemon Chicken.  Saute onions until brown and then add spices of ground coriander, ginger, white pepper, turmeric, Saffron and salt.  After browning remove from the pan and brown the chicken.  Place the onions with the spices in the Tagine, add chicken broth bring to a simmer and then add back the chicken.  Cover with the Tagine cover and cook in the oven for 45 minutes.  Remove from the oven ant take the chicken out and set aside.  Add dice lemon, slice olives ( I used capers in lieu of olives), and diced parsley.  Bring back to simmer and add butter to thicken. Then add lemon ire over the chicken, cover and let sit to absorb the flavors. Serve over rice or couscous.

Eggplant parm has been in my rotation for years. I’ll definitely try this.

Which direction are you cutting the eggplant and how thick are the slices?

I first peel off some but not all of the skin and then cut them round about 1/2 inch

Thanks for sharing. Love eggplant parm but haven't made it for years because it is time consuming and messy to fry it all up. Will definitely try this one.

Made the eggplant dish last night. Was a big hit. Just as good as breaded/fried with a fraction of the prep and cleanup. Will make this one again. Thanks.

My dad always told me bad food can look good if plated well and good food looks bad if poorly plated.

I understand the idea, but sorry, no matter how nice looking bad food is, once it goes in my mouth if it is bad, it is bad.  And same in reverse for good food.  I guess it is why I have not cared either way about presentation -- I guess I am one of the few that it is mainly about taste and I don't care what it looks like.

Judged a comp and when given box of ribs for presentation, scored a 9 because it was a good looking box.  Took a rib out of the box and it did not look or feel exactly right.  Bit into it and it was raw and cold.  Entry was disqualified and could have made folks sick, but it sure looked pretty!

The only eggplant dish that I prepare on a regular basis is Moussaka. It's a little bit more work than more traditional dishes but believe me, it's worth the effort. I think that it is considered Mediterranean Style Food.  :lick:

The Moussaka that I make has both béchamel and tomato sauce. My version consist of potatoes, eggplant, zucchini, ground beef/pork sausage (50-50), canned whole peeled tomatoes, tomato paste, onion, garlic, eggs, breadcrumbs and a few other spices, all topped with béchamel and baked.
