Bison burgers

Not pellet related but tonight we are going to try bison meat, more specifically my wife wants to try it. I am going traditional beef. Going to cook them on a little gas grill that surprisingly makes great burgers(closely watched). The question is this, as lean as I have heard it is, how different to cook? She’s looking forward to it and I have not a clue. Probably 3/4 “ thick is our typical burger but she doesn’t eat any beef with pink. Sushi, heck yeah, have NEVER figured it out.

It's 85% which isn't too lean. If I'm grilling burgers, I'll add a panade to keep them juicy. Otherwise, I'll just do smashburger and add nothing but S&P.

I am not going to smash them, not using the blackstone for these but we are S&P burger folks. I kind of figured that they wouldn’t be too awfully different but we use home ground mostly for beef and I try to keep it around 75%-25%. To me the more running down my chin, the better.
I should add that this looks like “softly pattied” it is going to be a brick.

The 3 times I have made them I treat them no different then a GB burger when I cook them.  Bison is truly a wonderful meat!

Looking forward to it but it just doesn’t look like our grind. Anxious to try and if she likes it I am in. Will post pictures if I haven’t passed out before then setting new fence posts. Sheesh!

Bison R & L, beef in the middle. Surprised how good it taste and in my efforts to keep them from drying out, I overlooked the beef. Beef is on the bun. Will do it again.

The 1st time I had Bison was in mid 80's at Tommy's Joynt on Geary Blvd in San Francisco.  It was good, but was in a stew, so did not really get the full flavor of the Buff!  1st time I had a burger was in Montana, we had bought some in Sand Point, ID and I grilled it that night.  Man, was it an eye opener!  It tasted like the beef I had eaten as a kid in the 60's!

The only time I have had a bison burger was at an Air Force Academy football game.

They look good.

I have never had Bison but was wondering if it is close to Elk? I have my Elk burger ground 90 - 10% fat. I do add some BBQ sauce and S&P to it before cooking. I cook on Pellet grill at 300-350 just don't have the grill marks.

First Bison I ever ate was about 1973 in a little joint in State Line Idaho.   They had like a 7 course meal for pretty reasonable price and we ate there quite often.  One of the courses was buffalo steak (very small piece) that you seared at your table on a tiny hibachi.  I remember it as quite tender and almost had a sweet taste to it. Always wondered whether it was a diner that burnt it down.

It is a more pronounced beefy flavor for sure, much richer.
Like Greg-B said it also has a kind of sweet flavor although until you said that I was still trying to find the word. Sure will do it again but @ 8 a#, they are not for a family burger feed, at least not for more than the two of us. I was also surprised at how soft they were, meaning not at all dense. I really thought by the raw ground meat appearance that it was going to be. That was surely not the case.

I really do like a bison burger, but as noted, the meat is VERY expensive, so it is a rare treat.

Not far at all from us is a Buffalo ranch called Plumlee, it is sold in a lot of the local grocery stores. On one of the website pages there is a short video of a tour, looks kind of neat. We see the ranch and the buffalo all the time out on Interstate 70, not sure why we waited so long to experiement.
We have not tried their meat but if you google them you can get an idea of the prices etc.
For another buck a pound, I am going to try their ground to see if it is different than the typical store bought stuff.

A fried of mine recently prepared a bison tenderloin and I loved it.  He said the bison ribeye is his favorite but I've never seen one. 

It's been several years since I had a bison burger but my first one was in Boulder, CO when I was in college (see my avatar  :cool:). 

Side note:  Ralphie is actually the name of the University of Colorado buffalo that runs on the field at the start of the football games.  For more than 25 years, each Ralphie has been donated to the school by Ted Turner from his Montana ranch.  After their turn as Ralphie (7-10 years), they retire and live their remaining years grazing on a Colorado ranch.  Speaking of Ted Turner...a chain called Ted's Montana Grill has great bison burgers. 

Fun fact:  Ralphie is always a female.  This is due to size and temperament, but not speed.  The females are just as fast! 

Also, the names buffalo and bison are interchangeable.
