What does BBQ mean to you?
« on: September 21, 2019, 02:03:40 PM »

I didn't want to further hijack BBL's thread.  And I don't think a poll will suffice.  There's just too many personal experiences.

For me:

1) My grandmothers BBQ chicken.   Very sweet BBQ sauce (maybe I'll post the recipe some day).  I have modified the process a little bit and do a reverse sear with the pellet pit and then gasser.   Traditionally was all done over charcoal.
2) I do love some pulled beef, chuck being preferred.  But it took me a decade to realize I really wanted chopped brisket.  https://pelletfan.com/index.php?topic=4016.msg50155#msg50155

How about you?  What's your definition of BBQ?

Cooking outside either with wood(pellets), or over lump, usually with a chunk or two of my favourite smoker woods, yellow birch being one of my favourites. With all that said, sitting back and watching the

the smoke making its forever changing path thru the air... The aroma (smoke and that true BBQ smell) is just an other aspect.. Finally, the food - unique indeed. It has spoiled me to the point of eating the

same food in a restaurant ends up being dull and less tasty...   It's just an other life style like no other...Be careful as it is addictive.

I love this answer, it's better and more real than the original intention of the question.  I was thinking Pork, beef, chicken etc, but you nailed it.  It's taking the time to make a quality product outdoor over fire (often too much of it) and sharing with friends.

At 10 years old, my sister Karen's parboiled chicken finished with kingsford charcoal on a Hilton Meigs Portable Kitchen.

At 18, chicken parts, hot dogs and hamburgers done on the Weber kettle w/charcoal.  At 25 sausages done on what ever $159 gas "BBQ" I bought from Home Depot.

At 32, ribs and chicken done on a UDS with hardwood chunks...

At 43, chicken, ribs, pork shoulder, sausage, hot dogs, hamburgers, meatloaf and brisket done on a hardwood pellet unit.

At 60, hot dogs, hamburgers and sausage cooked on pellets.

Low and slow outside cookin/smokin--

Great food with friends!

& DON'T FORGET THE SIDES. There's some absolutely great sides to enjoy with the main meats. Like my mother-laws potato salad, fresh sweet corn on the cob, Mrs ZCZ's Calico Beans, etc.etc.

Yes, the sides.  I would pick them over most "traditional" BBQ now.

To me, anything more than hot dogs or burgers cooked outdoors over open flames, usually with wood involved for smoke. My favorite BBQ is chuck or beef short ribs.

It's Daddy cooking something when he wasn't at the ranch when I was a really little kid and then my brother cooking for us.  I started when I was about seven or eight when I got the green light to do it by myself and we used gasoline to start the fire back then.  I'm sure I had help until my brother went to A&M and I was in my early teens.  And then as an adult it was every Sunday at our folks house with us taking turns cooking along with my sister's husband.  He's a good hand at it himself.  Those were good times.

When I was a kid, it was thin dry pork chops with a really good family recipe BBQ sauce (thin and vinegary).  That was when pork was supposed to be 165. In my family it was more like 180 just to make sure...they also had the faint hint of lighter fluid on the back end. Still think of those chops every time I smell charcoal fire in the air.

As an adult, a half chicken on top of a white piece of bread in a styrofoam box was what got me into smoking food. At that point I would have said anything on a grill or smoker was BBQ.

For no real reason, I wouldn't lump grilled food into bbq anymore if someone asked.
