Brisket and Salmon Surf and Turf
« on: January 21, 2020, 10:24:00 AM »

I googled and didn't find much on a brisket and salmon surf and turf.   I'll be hosting an annual family BBQ this summer and want to do something different than pulled pork and BBQ chicken.

I was thinking Snake River farms waygu brisket (will be my first attempt) and soy glazed salmon.  I'm pretty confident I can have two separately good meals, but I want to combine with a starch and salads for about 16 people.

Heck yeah, why not. We love them both but have not had them together.
I say go for it.

I gave you your 1 are you crazy response.

I heard a Sommelier say drink what ever wine with what ever meal makes you happy.  He just said there are certain guidelines they use, such as most might be put off having a full bodied red with salmon as the oils in the salmon will mix with the Tannin's in the wine and make it have a metallic taste.

A conflict like that would be the only issue I see.

I gave the second "Are You Crazy". Salmon is a dark meat with a very distinctive flavor, IMO, the only thing that salmon pairs well with is more salmon.

And I gave the 3rd. The two do not pair well. But that doesn't mean you shouldn't make both for those who would prefer one over the other.

You probably won't get meaningful results from your poll because it has a design flaw. Choices 1 and 4 are not mutually exclusive with 2 and 3.  Someone might think they pair well, but would prefer brisket. And I voted for #4, but would prefer brisket. So, determine if you are trying to find out if they pair well, or what folks would prefer.

agreed and understood.  Results have been helpful.  Google and PF seem to agree brisket and salmon don't mix.  And yes I did have in mind that I could make both with some guests only eating one or the other, not both.    I still have some other ideas in mind including brisket and grilled cajun white shrimp.    I've been having a lot of fun with seafood lately and maybe overstretched on mixing with brisket.

Still, I have 6 months to plan the event.   Lots of time for planning and re-planning.

Thanks all.

I have tried and tried,  but I just can't get along with salmon.

The next time you attempt, do two things, use fresh salmon (not old or previously frozen) and try basting it while grilling/baking/frying with a sauce made of butter, lemon juice, orange juice, minced garlic, chopped onion and brown sugar. The key is the sugar, it dampens the strong flavor without adversely effecting the overall experience.  IMO, old or previously frozen salmon develops a unpleasant "fishy" flavor, the sauce helps diminishes this characteristic and makes it palatable.

One of my pastimes is reading cookbooks and searching the web for recipes.  What I have found over the years the most successful chefs and bakers often take a path different from the conventional path.  They create different dishes and different ways to pair and serve them.  So IMO I say go for it.  Some will try both other will one or the other but anyway your BBQ will be a success.  Also if you are not sure as to how you will like it do a practice run and serve both at your Super Bowl party.

I just noticed there is a show on one of those food channels tonight that has a story on South Carolina surf and turf - pork and oysters.

That just does not sound good together.

I certainly wouldn't eat it, but figured I would through it out there as apparently it is popular at one place in South Carolina.

I did not respond to the poll since I do not think  you are crazy, don't know if they would be great together, I really like brisket and I really like salmon.  With that said, I say Go For It!  Why not try something bold.

Uh, I would not pair them. If were going to pair beef with salmon I would probably go with steak.
