Chili for hot dogs?

Can anyone point me to a hot dog chili sauce or give me tips?  Ever time I try I end up with something that is to close to Texas red chili.

You can try French's Chili-O seasoning and their recipe.

This is kinda how my Dad makes it.

2# ground hamburger fry in pan and chop up to your texture liking
mix in a cup to 1.5 cups of flour to make a roux
add pint or so of water after you tighten up the hamburger with the roux
add cup of chili powder
add mix of 50/50 ketchup and mustard to your desired liquidity of the sauce

I feel ya.  I cannot get the sauce right, the beef and the spices are easy, but gettin the texture of the sauce is tough.  At least I think I get ya.  Have you ever had a Wienerschnitzel Chili Dog and if so, is that the type of chili dog sauce you are lookin for?  Or have you ever has Tommy's chili?


If so you are gonna need some Wondra Flour...

Had my fix yesterday, a local place close to my former work, Ben Franks. Chili Cheese Dog and a Polish, I'm set for 2020.
Small drive-through place. Been there forever.

I don't know Tommy's but the flavor profile I am looking for would be in the Wienerschnitzel ballpark.  I got close once.  I think I had used a store bought mix but I don't remember the details as that was many years ago.   Maybe I should try a generic chili powder instead of grinding my own and using more roux.  I do use Wondra or cake flour in my roux.
I'm trying to end up with somthing like I had from high school concession stands made by proud parents and grandparents.  Nothing fancy, just good quality.  I'm not giving much to go on, but I think ya'll are pushing me in the right direction.


Lew thanks for the recipe and the French's product. I didn't know about that one.

We used to have aWienerschnitzel close to us (45 min), now the closest is 161 miles away.  Sure miss those chili dogs and their sauce. :'(

Have you tried the Todd Wilbur Top Secret version?  His recipes get posted everywhere.

I think his was the 1st one I tried, before you had to pay to see it (about 4 years ago).  If he is the guy that has a couple of "former employees" of Wienerschnitzel (one from El Paso) that swear that he is spot on.  They were not eating at the same restaurant as me I guess.  Found it funny that my review of his recipe did not make it over to his site when it went to charging money!  It was an OK Chili, but not even close to Wienerschnitzel.  Although I was really not paying attention to the taste as much as texture.  To me it was not close on either, but since you are looking for taste rather the texture, you might give it a try.

So, this may or may not blow up this conundrum.  About 40 or so years ago, we had a Der Weinerschintzel place here locally.  About 35 or so years ago, it changed to the 39 cent hamburger stand.  A few years after that, I move out of the area.  I moved back about 5 years ago, and I am fairly certain there is no restaurant there at all now.  In between then which is now 20+, when I live in San Diego area, there was a Der Weinerschitnzel.  Just like I remembered.  So, short story, I am not sure there was consistency from coast to coast on the chili sauce at der Weinerschnitzel.

And, my favorite punk rock band recorded a song about the place, but they were from Hermosa Beach.

I have only had Wienerschnitzel items in Fresno, So Cal and Las Vegas.  I never knew if they had gone nation wide, but apparently they did.  I think they must have contracted greatly over the last 25 years.  I even think they were closing the ones in Vegas when we were leaving.  I was under the impression that the chili came to the locations prepackaged, but maybe that is not correct and there were regional differences.

The composition of their chili is hard to explain to someone who has not had it.  For me it is almost a combination of chili and gravy!
