Low and Slow Hamburgers?

In this thread Clonesmoker describes cooking brat patties low and slow. “90 minutes at 225 on the brat patties was perfect! Best tasting brats patties I've ever had!!”

So, I'm wondering, have any you tried beef hamburgers comparably low and slow? 

If so, what was your time and temperature and what was the result?

No I haven't.  Not sure there is enough improvement in taste possible to justify the long prep time. Would no doubt, depend on meat/fat ratio, thickness of the patty, seasoning etc.  With that in mind, I am anxious to hear the results from those who have or will try it.  I am one who likes mine hot, dripping with juices (both fat and meat), and seared.

Yes, I always make burgers at 250°-275° for either 60 or 45 minutes.

The 1st time I remember doing it was over 10 years ago.  Randy Gille RIP, had a huge custom Evil Stick Burner.  We were doing a BBQ for the Troops event I think.  Had it at about 200° and put some burgers on.  I think it was 60-90 minutes and they were done.  Had a cute little smoke ring.

But after a long hiatus, I did some on the Memphis at 500° couple of nights ago...you all can have your smash burgers, and ones cooked on a griddle with crust...nothing compares to a grilled cheeseburger!

I don't do a sear after the slow cook.  Here are a few on a pretzel bun.

I like to cook  them at 275 takes around 40 to 50 min. depending on how thick they are.  I do not even turn them

I've done them many times at 180 for an hour or so and then crank it up to 400 to finish them or finish them on a gasser.

How do you get your mouth around that?

Low and slow is the way my wife and kids want them if they are coming from outside.  I usually do 250 for about an hour, maybe more depending on size.  They do turn out delicious.

Like nibble on the bottom edge (or top?).  I dislocated my jaw trying to get around the whole thing once.  :rotf:

This thread really had me yearning for a hamburger. The pellet grills still have not followed me north yet, but I do have an electric smoker that I have been using.

The burgers were just a little over 1/3 of a pound each. I mixed in some diced onions, mushrooms, and green peppers. Also added some Worcester sauce and McCormick garlic and herb seasoning. Smoked it at 250* for a little over an hour. Turned out very well. My sister-in-law (who is not a big burger fan nor is she shy about expressing her honest opion), really liked it. However, I think it will taste better on the pellet grill!

Here's what we had yesterday at the local Freddy's Steakburgers.  Commercial pics are very accurate to what we got.  Except they don't blot them, so they are still juicy and drippy.  Great fries.  Please note the crisped edges of the meat.  If you have one of these places locally, you might give it a try.  Thin patties bigger than the bun, and crisped at the edges.  First pic is the "Old Fashioned" (mustard, onion and pickle) and the second is the California style (mayo, sliced tomato, shredded lettuce, and large single slice of Vidalia Onion). 





I can make better at home but this is easier.

That is one Fine lookin Cheeseburger!  I would go try one tonight if the G550 was not in the shop!
