This recipe is from the Cake Boss cookbook. I make it slightly different than the book process wise, but the ingredients are straight from the book. I've been told by many it's the best blue cheese dressing they have ever had.
I can take or leave blue cheese so it's fine to me, but blue cheese lovers go nuts for it.
1 Tbs Dijon mustard
3 TBS apple cider vinegar
1 Tbs lemon juice
Salt, pepper
1/3 cup olive oil
1 cup gorgonzola or blue cheese
1/3 cup sour cream
2 TBS milk
Buzz the Dijon, lemon juice, and vinegar along with a pinch of salt and pepper in a food processor. Add the olive oil with the processor running to emulsify. Add half the blue cheese, sour cream, and milk. Process until nearly smooth. Pour into a container and stir in the other half of the blue cheese chunks.
It needs to sit for a few hours to be its best. Everything kind of mellows out over time. Really simple, great blue cheese dressing.
