Wedding Rehearsal Dinner.

We have a friend in the Brandy Station Volunteer Fire Dept who's son is getting married.  We are helping cook the rehearsal dinner Friday.  It will be Cesar salad, followed by wood roasted true Prime Rib with twice baked potatoes and glazed carrots, and cheesecake, blueberry crisp & bread pudding for dessert.

The beef has Wet Aged since August 7th.  Prepped the Rib Roasts and got the Rosemary & Montreal seasoning on.  Will cook tomorrow morning.  It will then be sliced and panned.  The reheating is what always concerns me.  There will be a med/m-rare pan and a med-well pan.  The medium well pan never worries me, as the person who is taking from that pan probably does not care if there is any color.  The medium pan, that is always the mutha.  I think I am going to pull the 1st one at 115° and hope for a 10-15° carry over.  Then pull the 2nd at 125° and hope for the same.  Then hope that in warming the beef that the medium pan will not go over 140°,  Wish me luck.

Looks great, hard to go wrong with prime rib.

We were going to make twice backed potatoes for Saturday, but when searching for something, I found it on a youtube video, and then fell into the rabbit hole looking recipe after recipe.
Found Hassleback Potatoes and decided to go with them (read that as SWMBO's orders) instead of twice backed potatoes. They looked really good.

Bent has the beef on the Memphis Pro.  I have made one dessert, the blueberry crisp, and the second one (a simple NY style cheesecake in cake pan with an Oreo crust).  Is in the oven.  The cheesecake will be set out with a choice of two cooked fruit toppings -- cherries (out of a can sorry!) or blueberries, which I cooked into a sauce this morning.  On to potatoes!!

Pulled the big one after 2 hours and 15 minutes.  Pulled about 15 minutes ago at 115°, is currently at 121° and still rising.  Will be curious if my method will give me the numbers I think!

Well the major stuff is done.  Kristin has to cook a 2nd cheesecake tonight, I need to make half a pan of Paula Dean's Bread Pudding, and tomorrow is carrots, salad, rolls and the reheating of stuff done today!

They were beautiful roasts, I wish I had the skill to do a carving station and they could have been eaten "fresh"!

That stuff looks great.  I think there are going to be some really happy people leaving that event.  I bet it may end up being the best meal they have ever had in Mayberry.
