What kind of ribs did the butcher sell you?

I should have noted that I smoked St. Louis style ribs yesterday.

The butcher says they are short ribs.  I am supposed to pick them up today before the weather gets bad.  Due to the cold rain and possible snow I won't smoke them now until I get back home to Alabama.

There are some scrumptious meals here. You folks have done a lot of work.

As it was a good cooking day, I fired up the Memphis and cooked: baked potatoes, a new variety of acorn squash. It was small ~ 1/3 the size of what we are used to. Cut in 1/2, seeds scooped out, the cavity

filled ~ 1/2 full using raisins and filled with maple syrup. Later when cooked it was mashed minus the skin. Ended up as being the best acorn squash ever..

As well we had turkey medallions produced by our local turkey farm. They are one of their specialities....

Everything was firstly cooked @ 330º indirect then the turkey and potatoes were finished over the direct flame insert. This meal gave us immense  enjoyment as did the weather. Just one of those days when

everything goes well.

Smoked ribs on Thursday, smoked a brisket on Friday and a porkbutt on Saturday so we can eat and drink beer on Sunday and labor Day.

I made a pork and green chile dish.

3.5 lb pork butt smoked for almost 3 hours.

Sauteed the following:
2 hatch chiles
2 poblanos
1 Onion
4 tomatillos
Half a lime sliced.
Adobo seasoning, cumin, salt & pepper.

Added half a beer and tropical juice. Then braised the meat for about 2 hours. Served on rice with mango avocado salsa.
