Italian dressing marinade question

When I was a kid my mom marinated inexpensive beef cuts with Italion dressing. Ive tried it once with an overnight soak. It was awful. Too strong. Tomorrow I'm trying again. Three hour soak sound about right?

Never heard of beef being done in it.  Does it have vinegar as one of its ingredients?

Yes. A little vinigar flavor is good...Too much is too much. :-[

I've never had beef marinaded in Italian dressing either.  I have with pork and chicken.

The vinegar tenderizes and the spices add flavor to chuck roast.

The vinegar tenderizes and the spices add flavor to chuck roast.

I think my wife throws the powder from italian dressing mix or some other packet into the crock pot with chuck roasts when she makes them with a gravy, potatoes, carrots, and onions.
