I run all my outdoor cookers between 250-350 for just about everything. I'm lucky enough to have an indoor gas grill that does a great job, so I rarely fire up the outdoor stuff just to grill. If I do, it's typically a grate set on top of a charcoal chimney.
In general, I cook because I like it and it's relaxing. I don't find grilling relaxing. Constant motion, and over too fast for my liking. I like slow cooked braises, soups, casseroles, etc over a quickly grilled meal any day. I do use my indoor grill pretty much daily, and think it's a very useful tool. It's just not my preferred method of cooking.
