I keep a journal for all my cooks.
Even for stuff I make on the stove.

at risk of going off topic, I purchased a snake river gold grade brisket today (post to come later) and I plan on trying the beef tallow method so popular on youtube lately.  Should help with any perceived dryness.

Thank you all for the great discussion and wonderful insights. I will continue to enjoy my journey to a well smoked brisket!!!
