Anybody cooking for the 4th ?

We will me making pulled pork sammies, burgers, brats, and dogs with homemade buns.
Guests will be bringing Potato Salad, Baked Beans, Cole Slaw, Fruit Platter, and a Dessert of some kind (It's always a surprise).

Having the usual poker group over plus a few extras.
Hopefully it won't be raining so we can play some Cornhole.
Forecast is rain for next several days though.

Making the buns now. When done, they will go into the freezer until Sunday morning.
That works well for us when we make bread or buns.
We just take out in the morning what we are going to have for the day (or two if bread) without having to worry about some getting hard.

I have 4 racks of ribs to make, another attempt at smash burgers on the griddle, some bacon and sausage strips on the griddle.  Maybe some italian sausage links.  Thinking about a pork shoulder but not sure yet.

It will be just my wife and I.  So one day will make hamburgers stuffed with mushrooms and cheese and on the next day brats with onions, pepper and mushrooms.  Will be cooking a major meal on the 6th for my neighbor.  He turns 89.  I will make prime rib, baked potato etc and a chocolate cake

If you add sauteed green beans to that meal on the 6th, I will be dropping by dinner. ;D

My niece wants me to setup my Traeger also for her to do some grilling on.  She will be doing her thing while I do mine on the GMG.  I think she wants to do some jalapeno poppers and corn.  I may have to get rid of the Traeger after this for cooking all these veggies on it, but maybe a good burnoff will get rid of the veggie juice.  :)

Well, the poppers should be wrapped in bacon, so that can be a partial offset :pig:

A bunch of cooks leading up to, and including, the 4th.

Thursday: smoked pork chops by special request
Friday: Full breakfast on the griddle and enchiladas for dinner.
Saturday: Home made red and blue corn tortilla tacos for breakfast/lunch and traditional Chinese hot pot for dinner
Sunday the 4th: Wood fire pizza on the GMG Daniel Boone.

Weber grill and griddle - bacon, Johnsonville sausage slices (found them by accident at grocery store.  they are basically sausage that is in bacon strips), leftover NY strip steaks sliced thin, grilled onions and tri color bell peppers - great breakfast.  My wife made canned biscuits with homemade chocolate gravy.

I have 4 racks of baby backs on the Memphis now.  First time this year that it has been fired up.

You can still bbq.  I bbq on Boxing Day. Any day is good for a nice grilling.
