Random ? About shipped/dried meat
« on: August 25, 2023, 09:31:08 PM »

A random question.  My wife ordered some dried/smoked meat from a place in NY. (We live in Iowa) We have bought from them many times.  This time around the UPS delivery was several hours late.  I opened the box within 5 minutes of delivery and I could smell the smoke from the meat and feel the heat coming out of the box.  I took my IR thermometer and the surface temp of the meat was 88.5 degrees.  Is the dried stuff safe to eat after being cooled off?

The seller was a total JA about it and said they weren’t responsible for shipping.  Balken Fresh customer service is a joke.

Many sellers of food such as meat and fish will not take responsibility for delayed shipping.  I recently had fresh fis that we caught in Alaska and all three packing firms said they were not responsible for delays after the fish was shipped.  fortunately all 250 pounds were iced and packed extremely well and arrived on time and still frozen.

Now IMO the fish could have arrived a few hours late and it would have been still frozen and or edible because it was packed well.  That said I do not know how dried or smoked fish should be packed or if it is bad because of the delay.

On a side note over the years i purchase my wine from a winery from California and on occasion it has come late.  They have always been willing to send me new wine if I thought the taste was off.

Maybe some more information would help. You say dried/smoked like salamis or dried beef, something for on a charcuterie board?

This is one example. There is also chicken salami that comes in a roll like ground beef and finally smoked and dried summer sausage rings.

For me I would probably give it a try with out much worry, it is probably all cured and smoked. looks like it is sealed well.

I guess bottom line is if the company will give no advice, you would have to decide if you wanted to give it a try or toss it and take the loss.

I can understand you concern with Iowa having the hot temps lately.

Thanks everyone for the replies.  We cut into a couple of the smoke pieces, they are fine!
