I am taking that first tray, swapping the brisket for either Rudy's or Lockharts, those beans look great and I am not a bean eater, but I would be eating on some of those. I like the color of the Oak'd sausage not sure of the flavor profile on it, and I am also a fan of sliced point, but it just looks like it has no color unless it is just the lighting.

I'm so glad you hit Pecan Lodge.  The best ever bite of BBQ for me was their beef ribs.

It was some of the best BBQ I ever had until I went back to Rudy's and then Terry Black's.  If Terry Black's had the Pecan Lodge brisket and mac and cheese, there would be no need to eat anywhere else.
