Seasoning/Rub Overnight or Not?

I have always put on my seasoning/rubs the day before and let it sit overnight in the frig.  Most of the recipes I have says to put the seasoning/rub on just prior to starting the smoker.

Which is better?

Not sure there is a lot.  Salt will draw moisture from any protein, so that may be any issue depending on what you put it on.

Like Bentley, I have put rub on overnight and right before throwing on the smoker.  I have even not put rub on shoulders and just threw it in the meat after it was pulled.

I can't tell a difference in flavor.  I think putting it on right before you cook saves you time and fridge space the day before.

I have done both ways also, not much difference to me. I have decided at the last minute I want to make ribs and just took them out of the freezer pulled the plastic off ran some water over them so the rub would stick and tossed them in the cooker. Still ended up with great ribs.

 I think if you are a bark person seasoning over night and then hitting them again maybe 20 minutes before you put whatever you are cooking in, you would have a better bark.

I normally traditionally roast our turkey in the oven so this may not apply.  I always dry rub the turkey the turkey the day before with salt, let it sit over night and apply a rub the next day.  I also place dabs of butter under the skin in various locations.
