Title: Risotto with Saute Scallops

One of my favorite meals is Risotto.  It is so versatile in that it goes with anything.  You can mix ingredients directly in it like asparagus, squash, chicken fish etc..  In this case I decided to sauté fresh sea scallops with smoked bourbon salt and pepper and place them on the risotto rather then mixed in.  I think it makes for a much nicer presentation.

A nice presentation, indeed!  It looks wonderful!

I doubt that any restaurant could top that.

LOVE risotto. LOVE arancini as much or more. I always make sure to have a ton of leftover risotto when I make it.

Roll into arancini the next day and freeze for future use.

Your dish looks fantastic!

I like them fried in butter, or served with drawn butter.  So sweet. A favorite.

like them even better with crisp bacon wrap around them.  You have to fry the bacon half way first (still limp), then wrap around the scallops before frying (takes a toothpick). If you use uncooked bacon, you will over cook the scallops while trying to get the bacon crisp.

I purchased this in small store in Georgia.  I also bought smoke bourbon pepper and Smoked garlic salt
