  • So I smoked at 150 for 2 hours on my Daniel Boone then seared in cast iron for 4 minutes a side then in the over for about 15 minutes until temp hit 129.  I let it rest for 10 minutes and there was still a lot of juices but it was delicious. I put a blue cheese compound butter on top and my it was good!
